Instructions

Step 1
Soak the dried fruit in the tea overnight or for at least 3 hours. Beat the eggs and sugar until creamy and frothy. Fold the flour into the egg and sugar mixture with the soaked fruit and remaining tea. Pour mixture into a large lined loaf tin or deep cake tin (approximately 8"). Bake in a 180° (fan 160°) oven for approx 50/60 minutes until a skewer comes out clean.
