Marinade

¼ cupkecap manis
3 lbsboneless skinless chicken thighs
Peanut Sauce
1 Tbspcooking oil
peanut, canola, vegetable
2garlic cloves
minced
1onion
small, diced, red, brown, yellow or white
½ cupcrunchy peanut butter
1 cupcoconut milk
full fat is better, but light is ok
2 ½ Tbspkecap manis
½ Tbspsoy sauce
1 Tbspfresh lime juice

Instructions
Step 1
Blend the marinade ingredients in a food processor until smooth. Cut the chicken into small and thin pieces, ensuring an even thickness and to allow the chicken to be skewered and lie flat for even cooking. Add the marinade, and store overnight for best results.
Step 2
Thread the chicken onto some wooden skewers: careful to not crowd, and skewer them to lie flat to cook quickly. Make sure to soak the skewers in warm water beforehand to avoid burning during the cooking.
Step 3
Cook the skewers over a hot oiled pan for ~5 minutes. Flip and cook for another 5 minutes.
