Ingredients

Chicken
2 x 160gchicken breasts
cut into halves, roughly piece
1 Tbsppaprika
1 Tbspgarlic powder
1 tsponion powder
1 Tbsporegano
½ tspchilli flakes
1 tspsalt
1 tsppepper
2 tspolive oil
Pasta
Creamy Sauce
200mllow fat milk
100glow fat cream cheese
Brand Philadelphia
20gParmesan cheese
grated
1 tspitalian herbs
90mlpasta water
For Cooking
1 tspolive oil
2garlic cloves
chopped
1onion
small, finely diced
50gcherry tomatoes
40gsun-dried tomatoes
optional
40gtomato paste
spinach

Instructions
Step 1
First butterfly cut the chicken breast. Season both sides with spices listed in the ingredients list
Step 2
Then get water in a pot, add salt then bring to a boil. Add your uncooked pasta and boil for 8 mins till al dente. Then remove 1/2 cup pasta, drain the remaining water and set the pasta aside.
Step 3
In a blender cup add milk, cream cheese, Parmesan, Italian herbs and pasta water. Blend till a smooth consistency
Step 4
Next cook the chicken on medium heat for 3-4 mins till golden brown then set aside
Step 5
Same pan on medium heat, add olive oil, chopped garlic and finely chopped onion. Cook for 1-2 mins then add tomato paste, cherry and sun-dried tomatoes. Cook for 1 min then turn off the heat
Step 6
While the heat is off, add the creamy sauce and keep stirring gently till it thickens. Then add a handful of spinach and let that wilt
Step 7
Add the cooked pasta then turn the heat back on to low and mix well. Place the chicken pieces on top, let it simmer for another 4-5 mins then garnish with parsley and ENJOY!
