Instructions
Step 1
Preheat the oven to 400. Half the sweet potato length wise making a boat. On a parchment lined baking sheet lay the sweet potatoe cut side down, and bake for 45 mins - 1 hour or until soft.

Step 2
While waiting for the sweet potato to cook, take this time to prepare your toppings. Dice tomato, lettuce and green onion.

Step 3
Make rice according to box instruction. While rice begins to boil in a separate pan on medium heat cook ground beef and diced onions for 10-15 minutes or until ground beef is cooked then add taco seasoning and follow seasoning instructions.

Step 4
Take out sweet potato and scoop out the center and put into a bowl and mash with butter, salt & pepper. Cut the sweet potato bowl in half; these will be the taco bowls.

To assemble take one sweet potato boat and layer in order, mash sweet potato, rice, ground beef, cheese, tomato, lettuce, salsa, hot sauce, soy sauce, sour cream and chopped green onion. Enjoy!
