Instructions
Step 1
Score meat in crosshatch pattern on both sides 1/8 in deep.
Step 2
Mix ingredients together. Rub half on either side.
Step 3
Let meat rest uncovered on wire rack in refrigerator for at least 30 min
Step 4
Take meat out of fridge while oven preheats to 425 degrees
Step 5
Sear meat in large skillet with a little olive oil for 3 minutes on each side. Place meat on wire rack in roasting pan and cook until internal temp reaches 155 degrees
Step 6
Take out of oven, let rest 5 minutes. Cut thin strips against the grain.
