Step 1
Preheat oven to 425 degrees.
Step 2
Pour approximately 1 1/2 cups of panko bread crumbs onto a plate. Season with salt, pepper, garlic powder, onion powder, paprika, oregano, and cayenne pepper to taste. Whisk. Crack eggs in a bowl, and beat thoroughly.
Step 3
Dip zucchini slice into the egg wash to coat. Drege slice in panko thoroughly, then place on parchment lined baking sheet. Repeat this step until all zucchini slices have been coated.
Step 4
Bake for 10 minutes. Flip all slices, and bake for an additional 10 minutes or until zucchini is tender.
Serve with Ranch dressing for dipping.
