Prepare the Base

In a medium saucepan, melt butter over medium heat. Add chopped onion and sauté until translucent, about 3-4 minutes.

Stir in flour and cook for 1-2 minutes, stirring constantly, to create a roux.

Gradually whisk in whole milk until smooth. Add very soft cream cheese, stirring until melted and incorporated into the sauce.

Season the Dip

Stir in sour cream, ground nutmeg, garlic powder, ground cumin, and ground paprika. Season with salt and black pepper to taste. Allow the mixture to simmer gently for 3-4 minutes, stirring occasionally, until it thickens slightly.

Remove the saucepan from heat and stir in 1 1/2 cups of shredded mozzarella or cheddar cheese until melted and smooth. Reserve the remaining 1/2 cup of cheese for topping.

Fold in cubed turkey breast and roughly chopped cooked bacon until evenly distributed throughout the dip mixture.

Preheat the oven to 350°F (175°C). Transfer the prepared dip mixture into an oven-safe baking dish. Spread it out evenly.

Arrange halved cherry tomatoes over the top of the dip. Sprinkle the remaining 1/2 cup of shredded cheese evenly over the tomatoes.

Bake the dip in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly, and the dip is heated through.

Remove from the oven and garnish with roughly chopped parsley for a fresh touch. Serve hot with crackers or bread for dipping.

To adjust the heat level, simply increase or decrease the amount of crushed red pepper flakes or add a dash of hot sauce to suit your preference for spiciness.
