2.5 lblamb leg
cut into 1" cubes
2 lbbaby potatoes
2stalks celery
chopped
3carrots
chopped in circles
1onion
large, chopped in large rings
4garlic cloves
coarsely chopped
8 ozmushroom
8 ozbrussel sprouts
chopped in half
1zucchini
chopped in big chunks
1 tsptomato paste
0.25 lbcherry tomatoes
1 Tbspflour

Instructions
Step 1
place potjie pot on hot coals
Step 2
Pour in oil and let oil get hot
Step 3
Salt and Pepper the meat and add flour to meat.
Step 4
Brown the meat, working in batches if needed
Step 5
Remove the meat and add the onions . Cook until browned
Step 6
Add garlic, celery, and tomato paste and cook about a 1 min
Step 7
stir in wine and seasoning and boil. Scrape up bits on side as it goes
Step 8
return meat to pot and fill will stock till just covers meat
Step 9
Simmer for about 1.5 - 2 hours and add more salt and pepper to taste
Step 10
Add vegetables in the following order: Potatoes, carrots, zucchini, Brussel sprouts. Cover and simmer 30 minutes
Step 11
Add mushrooms and cherry tomatoes and simmer another 30 min
Step 12
Stir and see what the consistency is. If thickening is needed, add cornstarch slurry until thick.
