Instructions

Step 1
LIGHTLY season the cubed beef with salt, pepper, garlic powder, cumin and paprika and set aside
Step 2
Finely chop/mince the 1/2 onion, 1/2 green pepper, and 1/2 red pepper. Or, pulse in a food processor until finely chopped. I use a food processor
Step 3
Peel the two red potatoes and cut into 1/2 inch cubes. Place the potatoes in a container with water and set aside.
Step 4
Add the following to the pressure cooker: 1 cup beef broth, 1/2 cup red cooking wine, minced veggies, ALL the dry spices, bay leaves, olives, olive brine, tomato paste (or tomato sauce), minced garlic. Stir to mix ingredients
Step 5
Add the cubed beef to the pot and mix everything together. Pressure cook on high for 15 minutes. Quick release pressure when time is up. Open pot and stir. (Meat will not be completely tender)
Step 6
Drain the potatoes from step 3 and add to the pot. Make sure potatoes are covered in the liquid. Close and pressure cook on high for 2 minutes. Quick release pressure when time is up. Open pot and stir. Check potatoes for doneness
Step 7
If you used tomato paste, sauce will be thickened already and you can simmer for 5 minutes to reduce the sauce a bit before serving... If you used tomato sauce, liquid will be thinner and you may need to simmer for a longer period of time until you reach desired consistency.
Step 8
Serve over a bed of white rice with a side of "Tostones", or "Maduros"
