Ingredients

2celery ribs

1brown onion

6 clovesgarlic

1 tspsalt
1 tspsmoked paprika
½ tspground cumin
½ tspdried thyme
½ tspdried rosemary
210gDried Green Lentils
preferably soaked 3 hours
1.4lChicken Bone Broth
low salt
400gtomatoes
tinned, finely chopped

240gFat Free Cottage Cheese
1 Tbspapple cider vinegar

Instructions
Step 1
Add a small amount of oil to a large heavy bottomed pot over medium heat
Step 2
Add carrots, celery, onion and saute for 6 mins or until soft.
Step 3
Add garlic, salt, paprika, cumin, thyme, rosemary and saute for 1 min.
Step 4
Add chicken, lentils, chopped tomatoes, bone broth (reserving 1 cup/mug full) and bring to the boil.
Step 5
To a blender cup, add butter beans, cottage cheese, and the reserved cup of bone broth. Blend until smooth.
Step 6
Add blender mixture to soup pot, bring back to the boil, and then reduce to a simmer.
Step 7
Simmer with a lid on for 25 minutes (or until lentils are cooked). At this point, taste for seasoning and add salt, pepper, and apple cider vinegar as needed.
Step 8
If your soup is too thin, you can add a cornstarch slurry or quickly bring to a boil without a lid to reduce.
Step 9
Add spinach, roughly torn, and stir through until wilted.
Step 10
Remove from the heat, serve and enjoy!
