Make the pesto:

In a food processor or blender, combine the basil leaves, garlic, pine nuts, and Parmesan.

While the machine is running, slowly add the olive oil until smooth.

Season with salt and pepper to taste. Set aside.

2. Cook the shrimp:

Heat 1 tbsp olive oil in a large skillet over medium heat.

Season the shrimp with salt and pepper.

Cook the shrimp for 2-3 minutes on each side until pink and fully cooked through. Remove from the skillet and set aside.

Prepare the zucchini noodles:

In the same skillet, add a little more olive oil if needed and sauté the zucchini noodles for 2-3 minutes until just tender but still firm (al dente). Avoid overcooking them, as they can become watery.
