Instructions
Step 1
Boil water in a saucepan and cook pasta until al dente, then drain.
Step 2
Meanwhile, heat oil in a frying pan, then add in leek and garlic, cooking for a few minutes.
Step 3
As leek begins to soften, add in capsicum and carrot.
Step 4
Cook for a further few minutes before adding in the peas and paprika.
Step 5
After another minute, add in cooked pasta with some of its water, along with the lemon juice. Season with salt and pepper. Mix thoroughly.
Step 6
Serve split between bowls with some grated parmesan and parsley to garnish.
