½ cupunsalted butter

¼ cuppumpkin puree

1 cupwhite chocolate chips
or milk chocolate if preferred

Instructions
Step 1
In a bowl, mix 1/2 cup brown sugar, 1/4 cup white sugar, and 1/2 cup softened butter until creamy (about 2 minutes).
Step 2
Add 1/4 cup pumpkin puree, 1 egg, and 2 teaspoons vanilla extract, then mix again.
Step 3
In another bowl, combine 1 1/2 cups flour, 3/4 teaspoon baking soda, 1/2 teaspoon salt, and 1 teaspoon pumpkin pie spice.
Step 4
Gradually add the flour mixture to the butter mixture, then fold in the white chocolate chips.
Step 5
If the dough is too soft, refrigerate for 20 minutes.
Step 6
Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
Step 7
Form dough balls on the sheets, leaving about 3 inches (7.5 cm) of space between each cookie.
Step 8
In a small bowl, mix 2 tablespoons of granulated sugar and 1/2 teaspoon cinnamon. Sprinkle this mixture on top of the dough balls.
Step 9
Refrigerate the trays with the formed dough for 30 to 40 minutes.
Step 10
Bake for 10 to 12 minutes, until the cookies are slightly golden. Enjoy!
