Instructions
Step 1
Preheat oven to 200 degrees Celsius and line a tray with baking paper.
Step 2
Add leek to the tray and drizzle with olive oil, salt and pepper. Roast for 15-20 minutes or until golden brown.
Step 3
Meanwhile cook pasta according to packet instructions.
Step 4
Heat a nonstick frypan over medium heat and cook lamb for 10-15 minutes or until cooked to your liking. Allow to cool and then slice.
Step 5
Combine all ingredients into a large mixing bowl and combine. Season with salt and pepper.
Step 6
Divide into two serves and store leftovers in the fridge.
