Step 1
Mix ground turkey with pepper, salt, smoked paprika, chopped garlic, and fresh dill. Form goofball sized meatballs and place onto heated skillet over medium heat with olive oil. Cook for 15 minutes.
Step 2
Preheat the oven to 450F. Chop your bell peppers, zucchini, and red onion into thin slices. Place on a baking sheet and drizzle with olive oil, lemon pepper, and dill weed. Place vegetables in the oven once heated for 20 minutes.
Step 3
Mix greek yogurt and 1/2 cucumber (grated) with the juice of one lemon, salt, pepper, fresh dill and set aside. Add 1 cup strained and rinsed chickpeas to your blender, 2 tbsp olive oil, salt, pepper and 1 clove garlic. Blend and add olive oil until desired consistency.
Step 4
Place one scoop of rice mixture in bowl, top with dollop of hummus & tzatziki. Top with roasted vegetables and four to five meatballs.
