MRS J1S Fried Sweet Potato casserole
It’s a long time family recipe. These sweet potatoes are more like a dessert than a side.

Instructions
Step 1
Boil potatoes until slightly undercooked. Drain and rinse in cold water. This can be done the day before.
Step 2
Preheat oven to 350.
Step 3
Peel and slice sweet potatoes in 1/4 inch slices. Set aside.
Step 4
In large skillet melt 1 - 2 sticks of butter. Add 1 - 2 cups brown sugar to melted butter, melting sugar into butter. The amount of butter and brown sugar depends on the size of your potatoes. On low heat, slowly bring butter and sugar to a boil. When butter and sugar start to caramelize, add sweet potatoes a few slices at a time. Stirring as you add the potatoes.
Step 5
Once all potatoes are in skillet, continue to heat until bubbling about 10-15 minutes. Stirring occasionally.
Step 6
Once bubbly goodness is present, transfer into 9x13 casserole dish and bake until bubbling.
Step 7
Remove from oven. Increase oven temperature to 450. Top potatoes with marshmallows (size doesn’t matter) and heat until golden brown.
