3 poundsapples
peeled and chopped
¼ cuplemon juice
0.5lemon
the zest of

½ teaspooncinnamon

Instructions
Step 1
In a food processor, add flour, sugar, a pinch of salt, cold butter then blitz everything for 20 seconds. Add cold water and mix everything again for 30/45 seconds or until you form a dough.
Step 2
Transfer your dough to a clean surface, knead for a minute, divide it into 2, wrap your doughs in some plastic film and rest in the fridge for 30 minutes.
Step 3
In the meantime, peel and chop your apples into cubes.
Step 4
In a pan over medium low heat, add some butter, your apples, some lemon zest and juice, sugar, your spices and cook for five minutes, stirring occasionally.
Step 5
Add cornstarch and cook for five more minutes or until thickened. Remove your apples from the stove and let them cool down completely.
Step 6
In the meantime, roll out one of your pastries into a thin sheet then cover a 20 cm pie pan.
Step 7
Roll out your second dough and form some stripes.
Step 8
Add your cold apples in your pie pan, cover with your pastry stripes, brush with egg wash and a sprinkle of brown sugar and bake for one hour, orange nice and golden (200C). Your pie completely completely cool down and enjoy. Buon appetito!
