Instructions

Step 1
To a large pot add butter, onion, carrots, and celery. Sauté for 10 minutes. Add the garlic and sauté for the last two minutes.
Step 2
Add the flour and sauté for 3 minutes
Step 3
Slowly stir in the chicken broth a little at a time to ensure you don’t get a paste
Step 4
Add in the chicken and boil the soup.
Step 5
Once the soup is boiling, add the gnocchi and cook for five minutes.
Step 6
Lower the heat and add the whipping cream and mix to combine
Step 7
Add the spinach leaves, thyme, Parmesan cheese, salt, and pepper and cook for 10 more minutes.
Step 8
Serve and enjoy!
