Instructions
Step 1
Add the biscuits to a bag and bash with a rolling pin until you have broken up the biscuits into small chunks. Pour into a large mixing bowl.
Step 2
Roughly chop the almonds and cranberries then add to the bowl along with the crushed biscuits.
Step 3
Add chocolate pieces and butter to a mixing bowl and pour the cream into a separate mixing jug.
Step 4
Heat the cream in the microwave for 1 minute until hot then pour over the chocolate pieces. Leave to sit for 5 minutes then whisk the chocolate and cream together until it comes together in a lovely smooth sauce.
Step 5
Pour this over the crushed biscuits and nuts and mix.
Step 6
Lay a large layer of cling film on the work surface. Pour the mix into the middle of the cling film and bring the sides up and roll the mix until it forms a thick sausage shape. Bring the sides up and then twizzle the ends to enclose the mix.
Step 7
Place into the fridge on a tray and leave to set for 4 hours until solid. Once solid, unwrap and roll in icing sugar.
