Step 1
Soak the beans overnight in 4 cups of salted water. I use celery salt.
Step 2
Drain and rinse beans.
Step 3
Add cubed meat and game seasoning together in a bag and coat well.
Step 4
In a large saucepan, heat oil on medium heat. Brown the meat, and remove. Then, cook onions, celery and carrots until just tender. Add a pinch of salt and pepper to taste. You can use stock to deglaze the pot if you have any cooked on bits. Add the remaining stock, the bay leaf, the meat (with any juices) and the beans and bring to a boil.
Step 5
Reduce heat, cover and simmer until beans are soft.
