Instructions

Step 1
to a large pot drizzle the olive oil down to heat up then add your chopped peppers and onions. cook until they become soft and fragment.

One veggies are soft sprinkle taco seasoning in and cook for about 1 minutes to let the spices heat up.

Deglaze the pot with a splash of the chicken stock and scrape and seasoning from the bottom and sides of the pot. Slowly add in the rest of the chicken stock

Next add in your shredded chicken and extra seasoning and let it come to a low boil

Step 5
Add in the rice and turn the heat down to medium and let cook covered for about 25-30 minutes or until the rice is tender. Make sure to stir occasionally to not scorch the bottom of the rice.
Step 6
Once the rice is cooked, turn the heat off and add in the cream cheese. It helps to cube the cream cheese to melt easier.
Step 7
After mixing in all of the cream cheese slowly add the shredded cheese and stir until completely melted. and Finally add in the queso and stir.
