Melty Mushroom & Onion Quesadilla

The quesadilla: a perfectly melty meal with millions of possibilities (well, maybe not millions, but you catch our drift). Here, we loaded two kinds of cheese between tortillas—Monterey Jack and its spicy pal, pepper jack. Then we added sautéed mushrooms and onion, two especially quesadilla-friendly veggies. If you ask us, there’s no such thing as a quesadilla without something delicious to dip it in, so there’s also savory crema and pico de gallo for all your dipping and topping needs.

Instructions

Step 1
Wash and dry produce. Trim and thinly slice mushrooms (skip if your mushrooms are pre-sliced!). Halve, peel, and thinly slice onion; finely chop a few slices until you have 2 TBSP (4 TBSP for 4 servings). Dice tomato. Quarter lime. Reserve ½ tsp Fry Seasoning (1 tsp for 4) in a small bowl
Step 2
Heat a large drizzle of oil in a large pan over medium-high heat. Add mushrooms, sliced onion, and remaining Fry Seasoning; season with salt and pepper. Cook, stirring, until beginning to brown, 4-6 minutes. Stir in stock concentrate and a splash of water; cook, stirring, until mushrooms are tender and saucy, 1-2 minutes more. (If mushrooms begin to brown too quickly, lower that heat!) Turn off heat; transfer to a plate. Wipe out pan.
Step 3
While mushrooms cook, add sour cream to bowl with reserved Fry Seasoning; stir to combine. Add water 1 tsp at a time until mixture reaches a drizzling consistency. Season with salt and pepper. In a medium bowl, combine diced onion, tomato, a squeeze of lime juice, salt, and pepper

Evenly sprinkle one half of each tortilla with pepper jack, then top with veggies and Monterey Jack; fold tortillas in half to create quesadillas
Step 5
Heat a large drizzle of oil in pan used for veggies over medium heat. Add quesadillas and cook until tortillas are browned and cheese melts, 3-5 minutes per side. (For 4 servings, you may need to work in batches, using a large drizzle of oil for each batch.) Cut into wedges, divide between plates, and serve with savory crema, pico de gallo, and remaining lime wedges on the side.
