Chicken
2boneless skinless chicken breasts
1 Tbspolive oil
1 tspgarlic powder
1 tsppaprika
½ tspsalt
¼ tspblack pepper
½ cupchicken broth
or water
Vegetables
2 cupsfresh green beans
trimmed
1 Tbspolive oil
or butter
2cloves garlic

Instructions
Cook the Rice
Step 1
In a medium pot, combine rice, chicken broth, butter (if using), and salt.
Step 2
Bring to a boil, reduce heat to low, cover, and simmer.
Step 3
Cook for 15-20 minutes for white rice (40-45 minutes for brown rice), or until liquid is absorbed. Fluff with a fork and set aside.
Prepare the Chicken

Season chicken breasts with garlic powder, paprika, salt, and pepper.
Step 5
Heat olive oil in a large skillet over medium heat.
Step 6
Add chicken and cook for 4-5 minutes per side, or until golden brown.

Pour in the chicken broth, cover, and simmer for 10 minutes, or until chicken is fully cooked (internal temperature of 165°F/74°C).

Remove chicken and set aside to rest for a few minutes before slicing.
Prepare the Vegetables

Slice 1-2 medium carrots into thin rounds or matchsticks (thin cuts will ensure they cook at the same rate as green beans).

Trim and rinse 2 cups of fresh green beans.
Cook the Vegetables

Heat 1 tbsp olive oil or butter in a skillet over medium heat.

Add the sliced carrots first and sauté for 2-3 minutes (since they take slightly longer to cook).

Add the green beans, minced garlic (2 cloves), salt, and pepper.

Stir to coat the vegetables in the oil and seasonings.

Sauté for another 5-7 minutes, stirring occasionally, until the carrots are tender and the green beans are tender-crisp.

Optionally, sprinkle red pepper flakes or a squeeze of lemon juice for added flavor.
Assemble and Serve

Plate the cooked rice, top with sliced chicken breasts, and serve green beans on the side.

Drizzle any remaining pan juices over the chicken for extra flavor.
