Instructions
Step 1
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
Step 2
In a large bowl, cream together butter and brown sugar until light and fluffy.
Step 3
Add eggs and vanilla extract, mixing until combined.

In a separate bowl, whisk together flour, cocoa powder, baking soda, salt, and instant coffee.
Step 5
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Stir in the chocolate chips.
Step 7
Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Step 8
Bake for 10-12 minutes or until the edges are set.
Step 9
While the cookies are still warm, sprinkle crushed candy canes over the tops.
Step 10
Let cool on the baking sheet before transferring to a wire rack.
