Instructions
Step 1
Boil water in a pot. Meanwhile, slice your carrots, daikon radish, snow peas, shiitake mushrooms, and pork belly.
Step 2
Place a bowl of cold water near the stove. When water boils, blanch carrots, daikon, and snow peas for 30 seconds.
Step 3
Transfer vegetables to cold water and empty the pot.
Step 4
In the same pot, boil dashi stock. Lower heat to simmer, add soy sauce, mirin, pork, and mushrooms. Cook for 1 minute.
Step 5
Drain vegetables and add them to the pot. Simmer for 3 minutes or until pork is cooked and veggies are tender.
Step 6
Season with salt if needed. Serve in bowls and finish with black pepper.
