Ingredients

2 Tbspextra virgin olive oil
1.5 poundsbottom round roast
onion
chopped
2cloves of garlic
minced
2carrots
sliced
1 cupportobello mushrooms
sliced
2tomatoes
large, seeded and chopped
2 Tbspfresh celery leaves
chopped
2 Tbsptomato paste
½ cupdry red wine
½ cupbeef stock
½ tspsalt
½ tspdried oregano
2 tspfresh rosemary
minced
Instructions
Step 1
In a large skillet over medium heat heat the oil. And the roast and Brown both sides. Turning once about six minutes total. Remove from heat.
Step 2
In the slow cooker, combined the onion, garlic, carrots, mushrooms, tomatoes, and celery leaves. Place the roast on top.
Step 3
In a small bowl, stir together, tomato paste, wine, stock, salt, and the oregano, mixing well. Pour the mixture over the roast.
Step 4
Cover and cook on low for 8 to 9 hours, or until the beef is very tender.
Step 5
Stir in the fresh rosemary, and serve.
