Instructions

Step 1
Heat olive oil in a large pot over medium heat. Add onions and garlic, cooking until softened, about 5 minutes.

Add mushrooms, carrots, barley, vegetable broth, thyme, salt, and pepper. Bring to a boil, then reduce heat to low.
Step 3
Simmer for 40-50 minutes until the barley is tender.
