Instructions

Step 1
To prepare the duck breast, first score the fat, making sure not to cut into the meat itself.
Step 2
In a small bowl, mix the olive oil, garlic powder, thyme, marjoram, sage, salt, and white pepper.
Step 3
Brush this mixture generously all over the skin and the meat.
Step 4
Heat a pan over medium-high heat and place the butter in the pan. Once the butter has melted, place the duck breast skin-side down, ensuring that the skin is in contact with the pan to render out the fat. Allow the duck to cook for about 30-35 minutes, continuously spooning the rendered fat and pan liquids over the breast to keep it moist.
Step 5
Once the duck breast is cooked to your desired level of doneness, remove it from the pan and set it aside to rest. In the same pan, add the rum and honey to the pan drippings. Stir gently over medium heat for a minute or two until the sauce thickens slightly. Slice the rested duck breast and serve it with the rum and honey sauce poured over the top.
