Instructions

Step 1
Combine wet ingredients: In a mixing bowl, combine butter, ghee, and sugar. Blend with a hand mixer on medium speed until well combined. Avoid incorporating air.

Add eggs: Add eggs one at a time, beating on low speed until just incorporated.
Step 3
Incorporate semolina: Add semolina in two batches, folding it into the mixture with a spatula until well combined.
Step 4
Add coconut: Add grated coconut in two batches, folding it into the mixture with a spatula until well combined.
Step 5
Add spices and color: Add nutmeg, cardamom, salt, and yellow food color (optional). Gently mix everything using the cut and fold method. The mixture should be slightly wet but thick.
Step 6
Rest the dough: Cover the bowl and let it rest at room temperature for 8-9 hours to allow the semolina to absorb moisture and flavors.
Step 7
Preheat oven and prepare baking tray: Preheat oven to 350°F (175°C). Line a baking tray with parchment paper.

Shape cookies: Using an ice cream scoop or spoon, make small balls of the dough. Place them on the prepared baking tray, leaving 2 inches between each cookie.

Cut crosses: Use a knife to cut a broad cross in the middle of each cookie.
