Instructions

Step 1
Soak Lentils in water for at least 12 hours. Remove any floating lentils before straining.

Dice the onion, carrots, and potatoes. Mince the garlic.

Step 3
Heat oil in a large stock pot on medium heat. Grab the sausage and cut off the tip of the sausage casing. Squeeze out small meatball sized amount of sausage into pot and cook until browned. Keep the ball shape as much as possible.

Add the diced onions and minced garlic to the pot. Cook for 3 minutes or until fragrant.

Add carrots, bullion cubes, and water to the pot. Cook until bullion is fully dissolved. You can sub in 32oz of chicken or beef stock in place of water for more flavor.

Add potatoes and lentils to the pot. Add water until everything is covered/partially submerged.

Bring pot to boil and add spices. Cover top of the water with dried seasonings and add 3 Bay leaves. Once boiling, reduce to simmer. Simmer for 30 minutes.

Turn off heat and let sit for an hour.
