Ingredients
4 servings
1 tspcooking oil
1 pinchsalt
100gboneless chicken thigh
or breast, cut into small bitesize pieces
100gJapanese mustard spinach
komatsuna, komatsuna, cut into 4cm, 1.5") pieces
4 pieceskirimochi
400mldashi stock
½ tspmirin
2 tspsoy sauce
2 slicesJapanese fish cake kamaboko
per portion
bonito flakes
katsuobushi, to garnish
Instructions
Step 1
Heat oil in frying pan on medium heat. Add chicken thigh, season with salt, and fry until cooked through. Remove from heat.
Step 2
In a small pot of boiling salted water, boil mustard spinach for 30 seconds. Transfer to ice water and set aside.
Step 3
Using same pot, combine dashi stock, mirin, and rice cakes. Simmer on low heat until mochi softens. Cook in single layer batches if needed. Place cooked pieces in serving bowls.
Step 4
Add soy sauce and cooked chicken to the pot. Simmer for 1 minute.
Step 5
Divide soup into bowls. Squeeze water from mustard spinach thoroughly, place on top of soup, and garnish with fish cake slices and bonito flakes.
