6chicken thighs
bone-in, skin-on
1 teaspoonsalt
1 teaspoonblack pepper
2 tablespoonsolive oil
4cloves garlic
minced
1onion
large, thinly sliced
1 cupcherry tomatoes
halved
½ cupkalamata olives
1 cupdry white wine
such as sauvignon blanc
½ cupchicken broth
2 tablespoonsfresh thyme leaves
2 sprigsfresh rosemary
1 teaspoondried oregano
1zest of lemon
2 tablespoonsfresh parsley
chopped, for garnish
Instructions
Step 1
Prepare the chicken: Pat the chicken thighs dry with paper towels and season both sides with salt and black pepper.
Step 2
Sear the chicken: Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken thighs skin-side down and cook for 5–6 minutes until the skin is golden and crispy. Flip the chicken and cook for another 3 minutes. Remove the chicken from the pan and set aside.
Step 3
Sauté the aromatics: In the same skillet, add the minced garlic and sliced onion. Sauté for 3–4 minutes until the onions are soft and translucent.
Step 4
Build the sauce: Add the cherry tomatoes, olives, white wine, chicken broth, thyme, rosemary, oregano, and lemon zest to the skillet. Stir to combine and bring to a simmer.
Step 5
Simmer the chicken: Return the chicken thighs to the skillet, skin-side up. Reduce the heat to low, cover, and let it simmer for 25–30 minutes until the chicken is tender and cooked through (internal temperature of 165°F).
Step 6
Garnish and serve: Remove the rosemary sprigs and discard. Sprinkle the dish with fresh parsley before serving. Pair with crusty bread, rice, or a light salad for a complete meal.
