Banana Oat FLOURLESS BLENDER WAFFLES

Because I’m a Southern girl at heart, a satisfying breakfast for me consists of either waffles, pancakes, French toast, or grits. Granted, I find myself eating a lot of easy grab-and-go breakfast items such as pastries or bagels; however, if you know me, then you know that they aren’t my favorite. While my favorites include all the “loadedness” (yes, I made up this word) that one can think of, like flour and cheese, my newest favorite type of waffle is these flourless ones. The best thing about them is that they are super filling and include a ton of nutrients, especially from the oats. I make these waffles at least once a month because they’re a big hit in my house. Who wouldn’t want to make their waffle batter in a blender, anyway—right? Tip: Once cool, leftover waffles can be stored in a tightly sealed zip-top bag in the refrigerator for a few days. To store them for longer periods, simply put them on a baking sheet lined with parchment paper and place in the freezer for 2 hours. Once fully frozen, remove and store them in a tightly sealed zip-top bag in the freezer for up to 3 months. To reheat, place the frozen waffles on a baking sheet lined with parchment paper and heat in a preheated 400°F oven for 10 to 15 minutes, or until warmed through.

Instructions

Step 1
1. Preheat a waffle iron. (If you have the option to choose the temperature, select medium-high—that’s what works perfectly for me!) Preheat the oven to the lowest setting.

2. Put the wet ingredients in a high-powered blender, then add the dry ingredients. Note: Putting the ingredients in the blender in this order—starting with wet and ending with dry—allows everything to blend well and become nice and smooth.3. Blend on high speed until the batter is smooth—15 to 20 seconds will do it.

4. Grease the preheated waffle iron, then spoon about ½ cup of the batter into the center of the iron. Close the lid and cook according to the manufacturer’s instructions until golden brown and crisp.

5. Transfer the completed waffle to a baking sheet and place in the oven to keep warm. Repeat until all the batter is used.
Step 5
6. To serve, stack the waffles (whole or cut) and, if desired, top with coconut whipped cream, fresh fruit, toasted nuts, and/or a drizzle of maple syrup.
