Baked Cajun CARROT CHIPS

These easy-to-make Cajun carrot chips are so delicious, and they are the perfect add-ins to so many meals. I love sprinkling them atop a salad in place of the usual roasted carrots, and I even enjoy them alongside a veggie burger or as a burger topping if I’m feeling fancy. For the best results, I purchase extra-large carrots to compensate for the inevitable shrinkage that will occur during baking—that way, I always end up with a nice-size chip! You’d be surprised at what a little extra seasoning can do to something as simple as sliced carrots
Tip:
For crispy chips, the carrots have to be cut very thin. The best way to do this is to use a mandoline (which gives them a nice waffle cut, depending on the blade used), but you can also use a sharp knife. You can cut the chips on the diagonal to get a larger surface area.

Step 1
1. Preheat the oven to 425°F. Line a sheet pan with parchment paper.

2. Put the carrot chips on the pan, then drizzle with the olive oil and season with the Cajun seasoning. Toss to coat. Arrange the chips in a single layer and bake for 12 to 15 minutes, until the edges begin to crisp. Remove the pan from the oven and flip the carrot chips. Return to the oven and continue to bake for another 5 to 8 minutes, until both sides are crisp.

3. Remove the carrot chips from the oven and allow to cool for 1 to 2 minutes. Top with parsley, if desired, and serve.
