Instructions
Step 1
Sift flours and salt in bowl. Rub in butter till it resembles fine bread crumbs. Add sugar and mis well.

Make a well in centre. Add yolk and water.. mix to a firm dough. Knead lightly.

Wrap in cling wrapped chill for an hour

Peel and quarter apples. Then cut in chunks. Add to saucepan with water and lemon. Cook till tender then cool.

Roll out the pastry (just over half the pastry mixture) line pie tin and brush the pastry base with apricot jam and then add cooked apples
Step 6
Roll out remaining pastry. Brush edges of pie with milk then cover top of pie with pastry and trim . Press edges together. Cut a few slices in top so steam can release Brush with egg yolk and dust with sugar and cinnamon.
