Ingredients
8 servings
3 cupsred skin potatoes
peeled and boiled
1brown onion
small
2 tablespoonssun dried tomatoes in oil
1 tablespoonoil
from tomatoes
1juice from lemon
2 teaspoonspaprika
2 teaspoonsgarlic powder
300 gramfirm tofu
block
½ cupnutritional yeast
2 cupsvegetable stock
made from water used to boil potatoes
1 ½ tablespoonstapioca starch
salt
to taste
Instructions
Step 1
Peel and dice potatoes and boil until very soft. Save two cups of water potatoes were boiled in and strain the rest off then put potatoes in high speed blender.
Step 2
Mix vegetable bullion with reserved water then also put in blender.
Step 3
Add remaining ingredients to blender then blend at highest speed until creamy smooth.
Step 4
Add salt to taste and adjust either water or tapioca starch at this point to desired thickness and mix well again with blender then enjoy!
