Instructions
Step 1
In a large deep skillet, heat 2 tbsp of oil over medium-high heat
Step 2
Add sliced onions and saute for couple minutes, until it's translucent
Step 3
Add sliced zucchini and stir well so it gets completely coated with oil. Add turmeric powder, salt to taste.
Step 4
Mix well, cover and continue to cook over low-medium heat until the zucchini softens, frequently stirring.
Step 5
Break an egg over the zucchini. Let the eggs cook for couple minutes, stir and mix everything
Step 6
Add green chilli and roasted cumin powder. Stir and cook for 1-2 minutes.
Step 7
Remove from heat and serve with steaming rice.
