A Mexican twist on a classic Indian dish using storecupboard ingredients. Dal is definitely one of the most economical - and tastiest - dishes you can make when you're eating on a budget and is perfect for batch cooking and freezing.

Step 1
Start by frying the onion in a large saucepan in a splash of olive oil for about 5 minutes until softened. Season, then add the garlic and continue to fry for a few more minutes until the garlic starts to colour. Next add the cumin, lentils, water and stock cube. Simmer over a low heat with no lid for 20 minutes, or until the lentils are fully cooked and have a lovely rich, thick consistency. At this point check the seasoning and add more salt and pepper if required. Now add the black beans for a final few minutes.
Step 2
Meanwhile, pan-fry the green beans in a dry frying pan with a big pinch of salt. Once the skin starts blistering and the beans are cooked, remove from the heat and garnish with flaked almonds.
Step 3
Sprinkle the dal with the sliced chilli and chopped coriander, dollop over the crème fraîche and serve alongside the green beans.
