White Chicken Chili

Such a great recipe for those chilly nights or just overall comfort food.
Want to thicken this up a bit just add a little butter and flour to the onions when sautéing! Add heavy cream or cream cheese for a little added flavor!
This will freeze well, just add the sour cream, or cream of your choice when you are ready to serve!

Chili Ingredients
1 Tbspextra-virgin olive oil
1yellow onion
small, diced
1jalapeño
seeded and minced
2cloves garlic
minced
½ tsporegano
½ tspground cumin
2 x 4.5 ozcans green chilies
3boneless skinless chicken breasts
cut into thirds
5 cLow sodium chicken broth
salt
to taste
pepper
to taste
2 x 15 ozwhite beans
cans, drained and rinsed
1 ½ cfrozen corn
½ csour cream
cilantro
freshly chopped, for garnish
¼ cshredded monterey jack
¼ ctortilla chips
crushed
Instructions
Step 1
1. In a large pot, over medium heat, heat oil. Add onion and jalapeño and cook until soft, about 5 minutes. Add garlic, oregano, and cumin and cook until fragrant, 1 minute. Add green chili’s, chicken, and broth and season with salt and pepper. Bring to boil, then reduce heat and simmer, covered, 10-12 minutes, until chicken is tender and cooked through.
Step 2
2. Transfer chicken to a plate and shred with two forks. Return to pot and add white beans and corn. White beans should be rinsed and drained. Bring to a simmer and let cook, 10 minutes, using a wooden spoon mash about 1/4 of the beans, turn off heat and add sour cream.
Step 3
3. Serve warm, garnish with favorite toppings
