Alfredo Chicken & Spinach Stuffed Shells
Jumbo shells stuffed with a mixture of spinach, alfredo, seasoned chicken, and cream cheese. Baked @ 350 for 12 minutes and cooked to perfection!

Ingredients
4 servings
1 x 12 ozstuffed shells
box
1 ½ cupsspinach
1 cupshredded parmesan cheese
hand
⅓ cupshredded mozzarella cheese
1.25 lbchicken breast
3 Tbssalted butter
4cloves garlic
minced
1 ¼ cupheavy whipping cream
1 cupwhole milk
2% also works
2egg yolks
large
Salt
until taste

oregano
1 ½ TbsItalian seasoning
paprika
onion powder
garlic powder
0.5 blockcream cheese
olive oil
Instructions
Step 1
Cook shells according to directions.
Step 2
Lightly coat both sides of chicken with salt, pepper, paprika, garlic powder, and oregano. Rubbing the mixture all over both sides.
Step 3
In a large skillet, heat up a drizzle of oil on medium-high heat. Once heated, cook the chicken 4-5 minutes on each side or until cooked fully. Once cooked, set aside to cool
Step 4
In a medium sized sauce pan combine butter, garlic, heavy cream and milk in a over medium heat. Bring to a simmer.
Step 5
Beat egg yolks in a small bowl. Add a spoonful of the hot milk mixture to the eggs, stirring to temper the eggs. Repeat with several more spoonfuls. Slowly add the egg mixture to the saucepan and stir to combine. Remove from heat.
Step 6
Stir in Parmesan cheese and mozzarella. Season with salt and pepper, to taste. Once good, set aside with lid to keep warm.
Step 7
Preheat oven to 350 degrees Fahrenheit. In the same pan used to cook the chicken, heat up another drizzle of oil until hot. Add the spinach and mix, coating with oil until cooked. Cube up cooked chicken breast.
Step 8
In a medium mixing bowl, combine half the block of cream cheese, cooked spinach, 1/2 a cup of your Alfredo sauce, and cubed chicken. Mix thoroughly until combined. Don’t be afraid to mush the chicken in with the mixture.
Step 9
Line a 9x13 pan with non-stick spray. (Or line with foil and then cooking spray for a fast clean up)! Lightly cap the bottom of the pan with a couple spoons of Alfredo sauce. Scoop a spoonful of the mixture into a shell and place on the pan. Repeat until you’re out of your mixture. Use a spoon to evenly coat your shells with your remaining Alfredo sauce until you’re out. Sprinkle with any left over Parmesan & mozzarella cheese as desired.
Step 10
Place in the oven and cook for 12 minutes. Once cooked, take out and let cool for 5 minutes. Serve and enjoy!
