Step 1
Combine blueberries, sugar, and lemon juice into a small saucepan.

Bring the mixture to a boil and then lower the temperature and let simmer for 10 minutes.

While that is simmering, cut your pie crust into little squares (approx. 1 inch).

Bake the pie crust squares according to the instructions on the package. Reduce the time by 3 mins to ensure they are not too hard when frozen.

Remove your blueberry compote from the stove and let cool for 15-20 mins.
Step 6
Combine heavy whipping cream, Greek yogurt, blueberry compote, and vanilla extract. Mix well.
Step 7
Freeze the mixture for 30 minutes and then mix throughly until smooth. Repeat until you reach soft serve consistency. About 4-6 hours.
