Cinnamon Apple Baked Oatmeal

I believe this was a weight watcher recipe that I’ve modified to improve health score. Original recipe calls for1/4 cup brown sugar and to sprinkle pecans on top. I serve with fresh banana to increase sweetness. Also substituted oak or almond milk for regular and increased cinnamon amount.

Instructions

Step 1
Preheat oven to 375. In large bowl combine oats, cinnamon, baking powder and salt. In medium bowl whisk milk, water, vanilla and eggs.
Step 2
Stir milk mixture into oats, fold in apples.
Step 3
Spoon mixture into 11x7 inch baking dish coated with cooking spray. Bake uncovered until set, about 25-30 minutes.
Step 4
Serve warm with fruit and milk if desired.
