Ingredients
4 servings
1 lblean sirloin
sliced into thin, wide strips
1red onion
thinly sliced
1yellow bell pepper
thinly sliced
1red pepper
thinly sliced
1jalapeno pepper
seeded and diced
1tomato
large, sliced into thin wedges
4garlic cloves
minced
1 tspolive oil
1 tspcumin
¼ cupreduced sodium soy sauce
1 ½ Tbspred wine vinegar
⅓ cupcilantro
roughly chopped
salt
to taste
pepper
to taste
Instructions
Step 1
Heat oil over medium high heat in a large skillet. Season beef with salt, pepper and cumin.
Step 2
Add beef and cook until browned on both sides, about 2 minutes per side. Add in garlic, onions and peppers, and cook for another 3-4 minutes.
Step 3
Stir in the vinegar and soy sauce. Cook for another 2 minutes, then add in the tomatoes and cilantro, and cook for another 2 minutes.
Step 4
Serve immediately.
