Breakfast burritos These breakfast burritos are the perfect breakfast on the go, you can easily prep everything ahead of time and in the mornings just assemble the burrito toast it and you’ll have a delicious breakfast ready for you and your family. For the protein I used chicken luncheon meat which you can find in your local Middle Eastern stores, you can also use bacon, sausage what ever you want or have or you can leave the protein out. Instructions

Step 1
1. Slice the luncheon meat and fry the meat and hash browns in olive oil until golden then remove them from the skillet
Step 2
2. To that same skillet add in the onion, jalapeño, bell pepper and sauté for about a minute, add a little more olive oil if needed
Step 3
3. Crack 6 eggs in with the vegetables season it with black pepper and salt and mix until the eggs are cooked to your liking
Step 4
4. Start assembling the burrito, tortilla first then the cheese, the egg and veggie mixture next the hash browns then lastly the meat then fold and close the burrito
Step 5
5. Spray some cooking spray in a skillet then Toast the burrito on both sides until golden and enjoy.
