Step 1
Preheat the oven to 170°C.
Step 2
Grate the carrots finely and set aside. In a large bowl, mix together all the dry ingredients. Place the yoghurt, honey, milk and grated carrots in another bowl and mix.
Step 3
Then start gradually adding the dry ingredients to the wet. Use a spatula to fold this in until no dry flour remains. Now add the cranberries and walnuts to the batter.
Step 4
Scoop the batter into a greased muffin tin and sprinkle each muffin with oats before baking.
Step 5
Bake for 25-30 minutes or until you can insert a toothpick and it comes out clean.
