Instructions
Step 1
Start the lentils boiling in water enough to cover all the lentils/moong. Note that Moong will take almost double the time to cook.
Step 2
Fry the chopped onion in olive oil until transparent.
Step 3
Add the pureed tomato. Cover and let simmer on low for a few minutes
Step 4
In a cup dissolve the Royco in about 3/4 cup of water and then add to the pan with the tomatoes and onion.
Step 5
Cover and let simmer on low for 10-15 minutes. Add water when it gets too dried out so that it does not burn.
Step 6
Check the lentils, they should have boiled a lot of the water away, boil them until there is only about an inch of water in the bottom. Do not drain.
Step 7
Add the onion/tomato mix to the pot of lentils. Add more water if necessary to make a thick soup.
Step 8
Salt to taste
Step 9
Stir in the finely chopped cilantro
