Step 1
Chop cranberries in food processor, or blender.
Step 2
Add clementine sections and chop. (You can also use 4 oranges. I prefer clementines, because they are easier to peel, and generally do not require seed removal.)
Step 3
Add apple and chop.
Step 4
Transfer to storage bowl. Once there, add sugar, almond extract, and pineapple. Stir with a spoon to blend. (This keeps the mixture from getting too pulverized in the food processor.)
Step 5
Chill in the refrigerator overnight, so the fruit can soak in its juices. (Yield: 7.5 cups)
