Garlicky Lemon Salad Pizza 🧄🍋🥬

This pizza was inspired by a summery Caesar salad. The cheesy garlic bread base is basically one big crouton. I wanted to keep the salad light to balance out the rich base, hence no creamy dressing on it…just some good extra virgin olive oil, a squeeze of lemon and some parmigiano reggiano cheese.

Cheesy Garlic Pizza Base
30gsalted butter
30mlextra virgin olive oil
4 clovesgarlic
minced finely

For the garlicky pangrattato (breadcrumbs)

Instructions
To make the garlic butter for the pizza base
Step 1
Heat butter + olive oil in small pan over med-low heat. Add in minced garlic and let simmer over low for 2-3 mins (be careful it doesn’t brown/burn)…add in parsley, salt (if needed) + pepper to finish.
To cook the pizza base
Step 2
Preheat your broiler/grill to a high heat. Cook by stretching dough out and laying into a lightly oiled preheated frying pan on the stovetop. Cook over medium-high heat, topping the dough (including the crust) with all but a tablespoon of the garlic butter (save this for the breadcrumbs). Add on the shredded mozzarella and parmesan cheeses. When the bottom of the pizza crust is golden and crispy on, transfer to a rack placed in the upper 1/3 of your oven. The grill/broiler will cook the base in a few minutes, watch closely so it doesn’t burn.
For the garlicky pangrattato (breadcrumbs)
Step 3
Throw a handful of breadcrumbs into the reserved Tbsp of garlic butter and cook over a medium heat until they’re golden brown and crisp. Remove from sauté pan and let cool on a paper towel to absorb excess oil.
Step 4
This can be done while the pizza base is cooking.
For the lemon + parmesan salad
Step 5
Place all salad ingredients into a large bowl and toss until everything is evenly dispersed.

This can be done before you cook the pizza base
Assemble the pizza

One the garlicky pizza base is cooked, top it with the salad, the pangrattato and a bit of extra shredded parmigiano reggiano and freshly cracked black pepper.
Step 8
Enjoy with a glass of wine in the sunshine!
