Instructions
Step 1
Preheat oven to 160C fan.
Step 2
Beat butter, vanilla extract and sugar together until light & fluffy.
Step 3
Sift in the flour and add the chocolate chunks. Mix together until it forms a soft dough.
Step 4
Turn dough onto a floured surface and knead lightly until smooth. Cover and refrigerate for 30 minutes.
Step 5
Roll dough between sheets of greaseproof paper until 7mm thick and cut into desired shape.
Step 6
Place about 3cm apart on baking trays and cook for 10 minutes until lightly browned.
Step 7
Stand for 3 minutes before transferring onto a wire rack.
