Step 1
Make diagonal cuts on the chicken breasts but don’t go all the way through
Step 2
And then add cuts on the opposite diagonal. So it looks like it’s cubed. But don’t cut all the way through.
Step 3
Add salt and pepper to taste and set aside
Step 4
In a large frying pan put a little olive oil and 1 tablespoon of margarine and let it melt
Step 5
Add 3 cloves of chopped garlic and sauté it. Then add the chicken breasts to the pan
Step 6
Fry for about 5 mins and then turn them over and fry for another 5 mins
Step 7
Remove the breasts from the pan and set aside
Step 8
Add another tablespoon margarine to the pan and melt it. Add 1 chopped onion, 3 chopped garlic cloves and sauté them
Step 9
Add 120ml water, large pack cream cheese, 1/2 lime squeezed; the chopped spring onion, 1 teaspoon paprika, 1 teaspoon oregano, 1 teaspoon black pepper, 1 teaspoon salt and stir to combine
Step 10
Put the chicken breasts in the sauce and cook for 10 minutes. Then turn them over and cook another 10 mins.
Step 11
Serve and top with the sauce
